TasteGrader.com buttonShortly after starting to make truffles, I was approached by a close friend who asked if I had ever thought of making hot and spicy chocolate. It had never occurred to me, but then I began to have other people ask if I had some chocolate and chipotle combinations. Always willing to experiment, I began to have some fun. The first was a chocolate-chipotle with sea salt sprinkled on top. My friend’s daughter began to refer to them as the “Dragon Truffles” – not because they put your mouth on fire, she would explain to people who were thinking of buying some. “But after the rich chocolate flavor is gone, there is a lingering warmth in your mouth that you know something was there besides the chocolate.”

Soon others began to make suggestions and the recipes continued to increase. When I was asked to prepare a truffle for entry into Chile Pepper Magazine’s ZestFest 2008, I began to experiment with the hot sauces from Zane and Zack’s World Famous Honey Co. After several “not hot enough” varieties, we came up with the winning combination. I have named these “Great Balls of Fire” fruffles.

My son, traveling through Hatch, New Mexico purchased some chili powder that he sent my way, and along came the Hatch Truffle with dried Bing cherries. This has become quite popular among his friends in southern California. One co-worker requested two tubes to be sent to her mother as a birthday present.

Caramel Sauce with Port

Hot Coffee Cake: $45.00, serves twelve. This was a second place winner at ZestFest 2009, the international fiery food challenge in Fort Worth Texas in 2009. This is not a cake for the faint hearted. Plenty of heat is provided by the coffee-based hot sauce used in making this flourless chocolate cake. Coffee is also introduced in the espresso powder baked into the cake. The coffee and its heat make a wonderful blend with the chocolate and cocoa. Cool it down with a scoop of vanilla ice cream and/or whipped cream. As dense as it is creamy smooth, the Hot Coffee Cake is flourless (gluten free).

Hot Lips Truffles

Hot Lips Truffles: $10.00, 7.9 oz. net weight, box of five. New for 2010, these mildly hot truffles are made with a chili pepper wine called “Kiss the Devil” from Johnson Orchards. T/A Peaks of Otter Winery. The wine won second place in last year’s Hot Pepper Awards and I e-mailed the owner about wanting to make a truffle using his wine. This is the wonderful result, the Kiss the devil Chocolate Caramel Sauce. Maybe too hot to drink straight from the glass, but blends wonderfully well with chocolate!


All orders are shipped via USPS Priority Mail for $10 for the first item and $1 for each additional item. A "Cold Keeper" is included to ensure your chocolates arrive fresh, although shipping to warm locations may be restricted during the Summer months. Sorry, shipping to US addresses only. If you wish to have a single order sent to multiple addresses we will be happy to work with you, but the base $10 per package cost will need to be collected separately.
